Cauliflower Fritters

Ingredients

500 gcauliflower, trimmed into small florets
2rashers of cooked lean bacon, diced
20 gParmesan cheese, grated
35 gself raising flour, sifted
25 gfresh breadcrumbs
3eggs, lightly beaten
1 clovegarlic, crushed
1 tbspchopped parsley
Pinchchilli flakes
Vegetable oil to shallow fry

These tasty fritters combine small cauliflower florets, cheese and bacon to make a delicious mouthful.  Serve with a chilli relish or drizzled with an aioli sauce.

Method

Cook cauliflower in a saucepan of salted boiling water for about 3 minutes or until tender. Drain well and set aside to cool.

Place cauliflower, bacon, Parmesan, flour, breadcrumbs, egg, garlic, parsley and chilli flakes in a bowl and mix gently until combined.

Heat enough oil to reach a depth of 5mm in a large frying pan over medium heat. Cook 1/4 cups of cauliflower mixture in batches, 2-3 minutes each side, until golden and cooked through.

Drain on paper towel.

Serve with a chilli relish or an aioli sauce.
